Pink Bourbon
Miguel Bohorquez grows a range of varieties at El Triunfo, Colombia, including Caturra and Castillo, but this lot comes from his Pink Bourbon trees, named for the pinky-orange tone of the cherries. Despite the name, it is not a Bourbon at all, but an Ethiopian landrace. The farm sits at 1,800 masl in the village of Paloquemado, Garzon, and has its own mill and dryer on site, giving Miguel full control over post-harvest work.
Coocentral
El Triunfo sells through Coocentral, the main cooperative in Central Huila, working with nearly 4,000 members across farms of 2 to 3 hectares at 1,400 to 2,000 masl. The cooperative has invested nearly $3 million USD in social programmes since 2005, covering housing, education, healthcare, and insurance for its members. Growers receive 100% of any premium paid above market price.
Washed, marquesina
Cherries are selectively handpicked, fermented and washed with care to preserve the variety's floral and tea-like character, then dried under a covered marquesina structure. It's a gentle, precise process that suits Pink Bourbon well and keeps the cup clean and expressive.
